Kesar Mangoes are generally sweet, although the taste and texture of the flesh vary across cultivars; some have a soft, pulpy texture similar to an overripe plum, while others are firmer, like a cantaloupe or avocado, and some may have a fibrous texture. The skin of unripe, pickled, or cooked Kesar mango can be consumed but has the potential to cause contact dermatitis of the gingiva, lips, or tongue in susceptible people.
The ripe fruit varies in color and size. Cultivars are variously yellow, red, orange or green, and carry a single flat, oblong pit that can be fibrous or hairy on the surface, and which does not separate easily from the pulp. Ripe, unpeeled mangoes give off a distinctive resinous, sweet smell. Inside the pit 1–2 mm about 0.039 to 0.079 inches thick is a thin lining covering a single seed, 4–7 cm about 1.6–2.8 inches long. Kesar Mangoes have recalcitrant seeds; they do not survive freezing and drying.

Preparation of pit

Before pit making, the marking is taken place to plant. The pits of 90x90x90 centimeters are usually dug out during summer months. While digging, it is necessary to keep the topsoil and the subsoil separately at ground in two heaps near each pit for about 2 to 4 weeks. After hitting the soil as well as the pit, the media is prepared by incorporating soil, sand and FYM fertilizer as per requirement and type of the soil. If soil is with poor drainage capacity, sand is mixed in that soil pesticides should be incorporated in soil. The top soil mixture should be filled first at the bottom of the pit rather than sub soil mixture. After first rainfall, the media filled in pit is settled with water introduced.

Planting and care after planting

Kesar Mango tree Planting is done during the rainy season when the soil in the pits has already settled. While planting the Kesar mango tree, one should be careful that the earth ball does not break and the graft union remains well above the ground level. The Kesar mango planting should preferably be done during cloudy weather and in the evening. The Kesar mango plants should be irrigated immediately after planting.
The Kesar planting should be protected against low temperature injury by

• Covering Kesar mango plants with some sort of cover, leaving the eastern side open for entrance of light.
• Building up slow fire around plant, which emit smoke
• Applying flood irrigation to plant may also be essential to ward off the ill effects of frost.
